Granite and marble are porous, so without a seal, liquids will penetrate and stain. When the seal fades and is not replaced, these stones can be easily marred by oil, wine, juice and anything acidic. Let the turkey smoke for about 2 hours without touching it. At the 2-hour mark, begin mopping the bird with the Maple Barbecue Mop Sauce hourly (see recipe below). Cooking time will vary depending on the size of the bird and the temperature of the smoker. For a 25 pound turkey, smoking time will take approximately 5 to 6 hours. For a 15 pounder, the cooking time is about 3 hours. Monitor the thickest part of the turkey breast but also check the turkey legs before bringing the turkey in the house. It is recommended that you use a good digital probe meat thermometer, checking the temperature every hour once you start mopping the bird. Turkey breast, which is white meat, cooks a little differently than the darker meat found in the legs and wings. It is important to find the happy medium between getting the two meats perfectly done. We usually go with the breast temperature and as long as both the white and dark meats are at least 165°F. At this point, the turkey is done. Remember, the temperature is going to increase some after it is pulled off the smoker. We recommend a finish temperature of 165°F simply because we believe that’s the optimum temperature based on our experience.

Cover the grill and cook until the temperature of the interior of the tri-tip reaches 120°F for a rare roast, 130°F for medium-rare and 140°F for medium. At this point the meat will take anywhere from 20 to 40 minutes to cook, depending on how hot your grill is, how well done you want it, and the size of the cut. Note that the interior temperature will continue to rise at least 5°F after you take the roast off the heat. Once the roast reaches temperature, remove it from the grill and let it rest, loosely tented with foil, for at least 10 minutes. Slice against the grain and serve. If you are using a gas grill with a top rack, I recommend placing the roast on that rack, with an aluminum tray on the bottom rack underneath to catch the fat drippings. If you are grilling on charcoal or wood, you may want to turn the roast over every few minutes, for more even heating.

Peach Cobbler Cooking Instructions: Preheat grill to 350 degrees F. Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Album review : Michael Jackson and family tribute: On the whole, Michael feels rather dull. Vocally, he’s on target the majority of the time, with the exception of the still manufactured-sounding, “Breaking News”, but musically it’s far from impressive. So many of the beats sound so derivative that it lacks any evolution, which is what Jackson was always about. Look at the transition between Off the Wall and Thriller, or better yet, Bad to Dangerous. He went from disco to ’80s synth, from hair metal aesthetics to New jack swing. What’s more, he always surrounded himself with the most top notch, key players in any industry. Do you think it was by chance that Jackson hired the likes of Macaulay Culkin or Michael Jordan for his videos? Remember, it was the early ’90s, those guys were just as much royalty as he was. The same went for Slash, or Eddie Van Halen, or Martin Scorcese, or Teddy Riley. That’s what’s missing on Michael.

My favorite song on Dangerous is “Remember the Time.” Like so many others on this album, it’s inextricable from its video, which also received the MJ treatment: simultaneous premieres on MTV, Fox and BET in February of 1992.
